Ingredients

Scale
  • 1 lb fresh green beans, trimmed and halved
  • 3 medium potatoes, peeled and sliced thin
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup fresh mushrooms, sliced
  • 2 tbsp gluten-free flour or cornstarch
  • 1 ½ cups milk (or dairy-free milk if preferred)
  • ½ cup vegetable broth
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup shredded cheese (optional for extra creaminess)
  • 1 cup crispy fried onions (gluten-free if needed)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Bring a pot of salted water to a boil. Add potatoes and cook for 5 minutes. Add green beans and cook for 3 more minutes. Drain and set aside.
  3. In a skillet, melt butter and olive oil. Add onion and garlic, cooking until fragrant. Stir in mushrooms and cook until tender.
  4. Sprinkle gluten-free flour or cornstarch over the mushrooms. Slowly whisk in milk and broth until smooth and thickened. Season with salt and pepper.
  5. In the baking dish, layer potatoes and green beans, then pour the creamy mushroom sauce over. Gently toss to coat evenly.
  6. Sprinkle cheese (if using) and top with crispy fried onions.
  7. Bake for 25–30 minutes until bubbling and golden brown on top. Serve warm and enjoy!
