Ingredients
- 1 lb ground beef
- 2 medium sweet potatoes, diced
- 1 cup corn (fresh or frozen)
- 1 avocado, diced
- 2 tbsp Tajín seasoning
- 1 tbsp vegetable oil
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C). Toss sweet potatoes with oil, salt, and pepper; spread on a baking sheet and roast 25‑30 minutes.
- While potatoes roast, brown ground beef in a skillet, seasoning with salt, pepper, and 1 tbsp Tajín.
- In a separate pan, heat corn and stir in remaining Tajín.
- Assemble bowls: layer sweet potatoes, beef, and corn. Top with diced avocado and cilantro if desired.
