  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 2 cans (15 oz each) diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons vegetable oil
  • 1 bell pepper, diced

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add diced onion and bell pepper; cook until softened.
  2. Stir in minced garlic and cook for 1 minute.
  3. Add cubed smoked beef; brown on all sides.
  4. Sprinkle chili powder, cumin, smoked paprika, salt, and cayenne; cook 2 minutes.
  5. Add diced tomatoes, kidney beans, and beef broth; bring to a boil.
  6. Reduce heat and simmer uncovered for 45 minutes, stirring occasionally.
  7. Taste and adjust seasoning before serving.

Notes

  • For extra smoky depth
  • add a teaspoon of smoked paprika extra. Adjust cayenne for desired heat. Chili tastes better the next day after refrigeration.
