  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup vegetable broth

  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 jalapeño, chopped (optional)
  • 1 bell pepper, chopped

Instructions

  1. Brown the smoked beef in a skillet over medium heat until a deep crust forms, about 5‑7 minutes.
  2. Transfer the browned beef to the crockpot.
  3. In the same skillet, sauté the onion, bell pepper, and garlic until softened, then add them to the crockpot.
  4. Add the black beans, kidney beans, pinto beans, diced tomatoes, vegetable broth, chili powder, cumin, smoked paprika, salt, and optional jalapeño. Stir to combine.
