- 3 tbsp butter
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup fresh mushrooms, sliced
- 2 tbsp all-purpose flour
- 1 ½ cups milk
- ½ cup vegetable broth
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup shredded sharp cheddar cheese (optional)
- 1 cup crispy fried onions (or homemade shallots for a Southern flair)
Instructions
- Preheat oven to 375°F (190°C). Boil green beans for 5 minutes, drain, and set aside.
- In a large skillet, melt butter and sauté onion and garlic until fragrant. Add mushrooms and cook until tender and lightly browned.
- Stir in flour and cook for 1 minute. Gradually whisk in milk and broth until smooth and thickened.
- Season with salt, pepper, and stir in cheese (if using). Add the green beans and mix until coated.
- Transfer to a baking dish, top with crispy fried onions, and bake for 25 minutes until bubbling and golden.
- Let rest for a few minutes before serving. Perfect alongside turkey, mashed potatoes, or cornbread stuffing!
