Ingredients

    • 4 medium potatoes
    • diced
    • 1 pound ground smoked beef
    • 1 tablespoon vegetable oil
    • 1 teaspoon smoked paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 can black beans
    • drained and rinsed
    • 1 cup corn
    • frozen or fresh
    • 1 cup shredded cheese
    • 1 avocado
    • diced
    • Fresh cilantro
    • for garnish
    • Salt and pepper to taste

Instructions

  2. Preheat the Oven

    Set oven to 425°F (220°C) and let it fully heat.

     

  3. Toss Potatoes

    Combine diced potatoes with vegetable oil, salt, and pepper; spread on a baking sheet.

     

  4. Roast Potatoes

    Roast for 25‑30 minutes, turning once, until golden and crisp.

     

  5. Cook Smoked Beef

    Sauté ground smoked beef until browned; add smoked paprika, garlic powder, onion powder, salt, and pepper.

     

  6. Assemble Bowls

    Mix roasted potatoes, beef, black beans, corn, and half the cheese. Divide into bowls, top with avocado, remaining cheese, and cilantro.
