- 1 lb fresh green beans, trimmed and halved
- 2 tbsp butter
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 oz fresh mushrooms, sliced
- 2 tbsp all-purpose flour
- 1 ½ cups milk
- ½ cup vegetable broth
- ½ cup shredded cheddar cheese (optional for extra creaminess)
- Salt and pepper to taste
- 1 cup crispy fried onions (store-bought or homemade)
Instructions
- Preheat the oven to 375°F (190°C).
- Bring a large pot of salted water to a boil and blanch green beans for 4–5 minutes. Drain and set aside.
- In a large skillet, melt butter and olive oil over medium heat. Add onion and garlic, sauté until fragrant. Add mushrooms and cook until tender and lightly browned.
- Sprinkle flour over the mixture and stir for 1 minute. Slowly whisk in milk and vegetable broth until smooth. Cook for 3–4 minutes until thickened.
- Stir in cheddar cheese (if using), then add the blanched green beans. Season with salt and pepper to taste.
- Transfer the mixture to a baking dish, top with crispy fried onions, and bake for 20–25 minutes until bubbly and golden.
- Let it cool slightly before serving.
