- 3 lbs bone-in, skin-on chicken thighs or drumsticks
- ¼ cup olive oil
- ⅓ cup fresh lemon juice
- 1 tbsp lemon zest
- 4 cloves garlic, minced
- 1½ tsp dried oregano
- 1 tsp dried thyme
- ½ tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 lemon, sliced
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (205°C).
- In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, paprika, salt, and black pepper.
- Place chicken in a large baking dish and pour marinade over the top, turning to coat evenly.
- Arrange lemon slices around and on top of the chicken.
- Let marinate for at least 20 minutes (or up to 4 hours for deeper flavor).
- Roast uncovered for 40–45 minutes, or until chicken is golden and cooked through.
- Optional: Broil for 2–3 minutes to crisp the skin.
- Let rest for 5 minutes, garnish if desired, and serve warm.
Notes
- Naturally gluten free and Paleo-friendly.
- For deeper flavor, marinate up to 4 hours or overnight.
- If you prefer quicker cooking, use boneless skinless thighs and reduce cook time accordingly.
- Let the chicken rest 5 minutes before serving.
