- 1 lb fresh green beans, trimmed and cut into 2-inch pieces
- 2 tbsp butter
- 1 tbsp olive oil
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 8 oz fresh mushrooms, sliced
- 2 tbsp all-purpose flour
- 1 ½ cups milk
- ½ cup vegetable broth
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup shredded mozzarella or cheddar cheese (optional)
- 1 cup crispy fried onions
Instructions
- Preheat oven to 375°F (190°C). Bring a pot of salted water to a boil. Add green beans and cook for 4 minutes until bright and tender-crisp. Drain and set aside.
- In a skillet, melt butter and olive oil over medium heat. Add onion and garlic; sauté until fragrant. Add mushrooms and cook until softened.
- Sprinkle in flour, stirring constantly for 1 minute. Gradually whisk in milk and vegetable broth until the sauce thickens. Season with salt and pepper.
- Stir in cheese (if using), then fold in the green beans until evenly coated.
- Transfer mixture to a baking dish and top with crispy fried onions.
- Bake for 20–25 minutes until bubbly and golden brown.
- Let rest 5 minutes before serving warm.
