Ingredients

  • 1 lb ground beef
  • 1 cup rice
  • 2 cups beef broth
  • 1 cup shredded cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brown ground beef in a skillet, drain fat.
  3. Add diced onion and minced garlic; sauté until softened.
  4. Stir in rice, beef broth, frozen vegetables, salt, garlic powder, onion powder, and paprika; bring to a boil.
  5. Cover and simmer 15 minutes until rice is cooked.
  6. Mix in milk and half of the shredded cheese.
  7. Transfer mixture to a greased baking dish, top with remaining cheese.
  8. Bake for 20 minutes until bubbly and golden.

Notes

  • For extra flavor
  • add a pinch of crushed red pepper flakes with the spices. Leftovers reheat well in the microwave or oven.
