  • 1 cup beef pepperoni, chopped
  • 1 can (15 oz) enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup low carb tortillas, cut into strips
  • 1 cup diced bell peppers
  • 1/2 cup diced onion
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions
