Description

  • 1/4 cup maple syrup

  • 1/4 tsp salt
  • For the pecan filling: 1/2 cup chopped pecans
  • 1/4 cup brown sugar
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil, melted
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, beat vegan butter and brown sugar until creamy. Mix in maple syrup and vanilla.
  3. Stir in flour, baking soda, cinnamon, and salt until dough forms.
  4. Roll into tablespoon-sized balls and place on baking sheet. Flatten slightly and press your thumb into the center to make a small well.
  5. Mix pecans, brown sugar, maple syrup, coconut oil, cinnamon, and salt in a small bowl. Spoon mixture into cookie wells.
  6. Bake 10–12 minutes, until cookies are set and golden at the edges. Cool before serving.
