- 2 cups cooked shredded chicken (rotisserie works great)
- 1 1/2 cups enchilada sauce (red or green)
- 1 cup sour cream (or Greek yogurt)
- 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
- 8 flour or corn tortillas
- 1 small onion, diced (optional)
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper, to taste
- Fresh cilantro, sliced jalapeños, or avocado (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet, heat olive oil over medium heat. Sauté onion until soft, about 3 minutes. Add shredded chicken, cumin, chili powder, and ½ cup of enchilada sauce. Stir to combine and warm through.
- Spread a thin layer of enchilada sauce on the bottom of the baking dish.
- Fill each tortilla with a scoop of chicken mixture and a sprinkle of cheese. Roll tightly and place seam-side down in the dish.
- Pour remaining enchilada sauce evenly over the top and sprinkle with the rest of the cheese.
- Bake for 20–25 minutes, until cheese is melted and bubbly.
- Garnish with cilantro, avocado, or jalapeños before serving.
Notes
- Use rotisserie chicken for quick shredding.
- To keep this gluten-free, use corn tortillas and check that the enchilada sauce is gluten-free.
