Description

Twix Bars (Gluten-Free Recipe) – A healthier gluten-free twist on a classic treat.


Ingredients

  • For the cookie base: 1 ½ cups almond flour
  • For the cookie base: 3 tbsp coconut oil, melted
  • For the cookie base: 2 tbsp maple syrup or honey
  • For the cookie base: ½ tsp vanilla extract
  • For the cookie base: Pinch of salt
  • For the caramel layer: 1 cup pitted Medjool dates (soaked in warm water for 10 minutes)
  • For the caramel layer: 3 tbsp almond butter or peanut butter
  • For the caramel layer: 2 tbsp coconut milk
  • For the caramel layer: 1 tsp vanilla extract
  • For the caramel layer: Pinch of salt
  • For the chocolate layer: 1 cup dark chocolate chips (dairy-free if needed)
  • For the chocolate layer: 1 tsp coconut oil

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. In a bowl, mix almond flour, melted coconut oil, maple syrup or honey, vanilla, and salt until a dough forms. Press evenly into the prepared pan.
  3. Bake for 10–12 minutes or until lightly golden. Let cool completely.
  4. Blend dates, almond butter, coconut milk, vanilla, and salt in a food processor until smooth and creamy. Spread evenly over the cooled cookie base and chill for 30 minutes.
  5. Melt chocolate chips and coconut oil together until smooth. Pour over the caramel layer and spread evenly.
  6. Refrigerate for 1–2 hours until firm, then cut into bars. Store in the fridge for up to 10 days.
