Twix Bars (Gluten-Free Recipe) – A healthier gluten-free twist on a classic treat.
Ingredients
- For the cookie base: 1 ½ cups almond flour
- For the cookie base: 3 tbsp coconut oil, melted
- For the cookie base: 2 tbsp maple syrup or honey
- For the cookie base: ½ tsp vanilla extract
- For the cookie base: Pinch of salt
- For the caramel layer: 1 cup pitted Medjool dates (soaked in warm water for 10 minutes)
- For the caramel layer: 3 tbsp almond butter or peanut butter
- For the caramel layer: 2 tbsp coconut milk
- For the caramel layer: 1 tsp vanilla extract
- For the caramel layer: Pinch of salt
- For the chocolate layer: 1 cup dark chocolate chips (dairy-free if needed)

Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- In a bowl, mix almond flour, melted coconut oil, maple syrup or honey, vanilla, and salt until a dough forms. Press evenly into the prepared pan.
- Bake for 10–12 minutes or until lightly golden. Let cool completely.
- Blend dates, almond butter, coconut milk, vanilla, and salt in a food processor until smooth and creamy. Spread evenly over the cooled cookie base and chill for 30 minutes.
- Melt chocolate chips and coconut oil together until smooth. Pour over the caramel layer and spread evenly.
- Refrigerate for 1–2 hours until firm, then cut into bars. Store in the fridge for up to 10 days.
