- 2 cups corn kernels (fresh, frozen, or canned and drained)
- 1 cup shredded cheddar cheese
- ½ cup cream cheese, softened
- ½ cup sour cream or Greek yogurt
- ¼ cup mayonnaise
- 1 small jalapeño, finely diced (optional for spice)
- ¼ cup green onions, chopped
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and pepper to taste
- 1 tbsp chopped cilantro (optional for garnish)
Instructions
- Preheat oven to 375°F (190°C) if serving warm.
- In a large mixing bowl, combine corn, cheddar cheese, cream cheese, sour cream, mayonnaise, jalapeño, green onions, garlic powder, paprika, salt, and pepper. Mix until smooth and creamy.
- Transfer to a small baking dish and bake for 20–25 minutes until hot and bubbly.
- For a chilled version, skip baking and refrigerate for at least 1 hour before serving.
- Garnish with cilantro or extra green onions and serve with tortilla chips, crackers, or veggie sticks.
Notes
- Can be served warm straight from the oven or chilled for a refreshing dip.
- Jalapeño is optional for spice; adjust to taste.
- Best eaten the same day, but can be stored in the fridge for up to 2 days.
- To lighten, substitute Greek yogurt for sour cream and reduce mayo slightly.
