- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1½ tsp chili powder
- 1 tsp ground cumin
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 cup shredded cheddar cheese
For the Cornbread Topping:
- 1 box gluten-free cornbread mix
- 1 large egg
- ⅓ cup milk
Optional toppings:
- sour cream
- chopped cilantro
- sliced jalapeños
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
- Stir in black beans, corn, diced tomatoes, chili powder, cumin, paprika, salt, and black pepper. Cook for 2–3 minutes, then remove from heat.
- Spread the beef mixture evenly into the prepared baking dish and sprinkle cheese over the top.
- In a bowl, mix cornbread mix, egg, and milk until just combined.
- Pour the cornbread batter evenly over the filling.
- Bake uncovered for 35–40 minutes, or until the cornbread topping is golden and set.
- Let rest for 5 minutes before serving. Top with sour cream, cilantro, or jalapeños if desired.
Notes
- Gluten-free cornbread topping makes this casserole gluten-free by default.
- Can be frozen for up to 3 months for freezer-friendly meal prep.
