Description

Texas Tamale Pie Casserole: A bold, comforting one-dish dinner featuring seasoned ground beef, black beans, corn, and a cheesy gluten-free cornbread topping.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1½ tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup shredded cheddar cheese

For the Cornbread Topping:

  • 1 box gluten-free cornbread mix
  • 1 large egg
  • ⅓ cup milk

Optional toppings:

  • sour cream
  • chopped cilantro
  • sliced jalapeños

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
  4. Stir in black beans, corn, diced tomatoes, chili powder, cumin, paprika, salt, and black pepper. Cook for 2–3 minutes, then remove from heat.
  5. Spread the beef mixture evenly into the prepared baking dish and sprinkle cheese over the top.
  6. In a bowl, mix cornbread mix, egg, and milk until just combined.
  7. Pour the cornbread batter evenly over the filling.
  8. Bake uncovered for 35–40 minutes, or until the cornbread topping is golden and set.
  9. Let rest for 5 minutes before serving. Top with sour cream, cilantro, or jalapeños if desired.
