- 1 lb ground beef
- 1 small onion, chopped
- 1 tbsp olive oil
- 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
- ½ cup sour cream
- 1 cup shredded cheddar cheese
- 1 (15 oz) can corn, drained (optional)
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and pepper, to taste
- 1 (32 oz) bag frozen tater tots
- Fresh parsley or green onions, for garnish
Instructions
- Preheat oven: Set to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook the beef: Heat olive oil in a skillet over medium heat. Add ground beef and onion. Cook until beef is browned and onion is softened. Drain grease and season with salt, pepper, paprika, and garlic powder.
- Make the creamy filling: Stir in cream of mushroom soup, sour cream, cheddar cheese, and corn (if using). Mix until creamy.
- Assemble: Spread the beef mixture evenly in the baking dish. Arrange tater tots in a single layer on top.
- Bake: Bake uncovered for 30-35 minutes, or until the tater tots are crispy and golden.
- Serve: Garnish with parsley or green onions and enjoy warm!
