Taco Soup is quick, easy, ultimate comfort in 30 minutes.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 tsp ground cumin
  • ½ tsp paprika
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups beef broth
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced green onions, tortilla chips

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  2. Add onion and garlic and sauté for 2–3 minutes until softened.
  3. Stir in taco seasoning, cumin, and paprika until well combined.
  4. Add black beans, kidney beans, corn, diced tomatoes, diced tomatoes with green chilies, and beef broth. Stir well.
  5. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes, stirring occasionally.
  6. Taste and season with salt and black pepper as needed.
  7. Serve hot with your favorite toppings.
  8. Slow Cooker Option: Brown the beef with onion and garlic first, then transfer everything to a slow cooker. Cook on low for 6–7 hours or high for 3–4 hours.

Notes

  • Feel free to customize toppings to taste; add jalapeños for extra heat.
  • To lighten, use ground turkey or chicken instead of beef.
  • If you prefer thicker soup, use less broth or mash some beans.
  • Leftovers store in the fridge up to 3-4 days or freeze for up to 3 months.
