- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup shredded cheddar cheese
- 1/4 cup ranch dressing
- 24 mini tortilla cups
- 2 tbsp chopped green onions or parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Arrange mini tortilla cups on a baking sheet.
- In a skillet over medium heat, cook ground beef until browned, breaking it apart as it cooks. Drain excess fat.
- Stir in taco seasoning according to packet directions and remove from heat.
- Mix shredded cheddar cheese and ranch dressing into the seasoned beef until well combined.
- Spoon the beef mixture evenly into each tortilla cup.
- Bake for 10–12 minutes, or until heated through and the cheese is melted.
- Remove from oven, garnish if desired, and serve warm.
Notes
- Make ahead tip: You can assemble the filling and refrigerate up to 24 hours before baking.
- For a spicier kick, add a pinch of chili powder or jalapeños to the beef filling.
- To keep cups crisper, bake the filled cups for a few minutes longer until the cheese is melted and bubbling.
- Leftovers can be reheated in a 350 F oven for about 5 minutes.
