Description

Taco Ranch Bites: bold, cheesy, and irresistibly addictive bite-sized appetizers featuring seasoned ground beef, cheddar, and ranch tucked into crispy mini tortilla cups.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 24 mini tortilla cups
  • 2 tbsp chopped green onions or parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Arrange mini tortilla cups on a baking sheet.
  2. In a skillet over medium heat, cook ground beef until browned, breaking it apart as it cooks. Drain excess fat.
  3. Stir in taco seasoning according to packet directions and remove from heat.
  4. Mix shredded cheddar cheese and ranch dressing into the seasoned beef until well combined.
  5. Spoon the beef mixture evenly into each tortilla cup.
  6. Bake for 10–12 minutes, or until heated through and the cheese is melted.
  7. Remove from oven, garnish if desired, and serve warm.

Notes

  • Make ahead tip: You can assemble the filling and refrigerate up to 24 hours before baking.
  • For a spicier kick, add a pinch of chili powder or jalapeños to the beef filling.
  • To keep cups crisper, bake the filled cups for a few minutes longer until the cheese is melted and bubbling.
  • Leftovers can be reheated in a 350 F oven for about 5 minutes.
