- 1 tbsp olive oil
- 1 packet taco seasoning (or 2 tbsp homemade taco spice mix)
- ½ cup water
- 1 cup cooked white rice (or Mexican rice)
- 1 cup shredded cheddar or taco blend cheese
- ½ cup nacho cheese sauce (optional, for extra cheesiness)
- ½ cup sour cream
- 1 cup diced tomatoes
- ½ cup chopped lettuce (optional)
- 4 large flour tortillas
Instructions
- Cook the beef: Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Drain grease, then stir in taco seasoning and water. Simmer for 3-4 minutes until thickened.
- Warm the tortillas: Heat tortillas in a dry skillet or microwave until soft and pliable.
- Assemble the burritos: Lay a tortilla flat and spoon a layer of rice, beef, shredded cheese, and nacho cheese sauce (if using) into the center. Add a dollop of sour cream and diced tomatoes.
- Fold and seal: Fold in the sides, then roll the burrito tightly from the bottom up.
- Toast (optional): For that crispy finish, place burritos seam-side down in a warm skillet and toast 1-2 minutes per side until golden.
- Serve: Slice in half, add lettuce if desired, and enjoy your cheesy, melty, beefy burrito bliss!
