Description

Sweet Potato Bites with Marshmallows and Pecans are a festive holiday treat featuring roasted sweet potato rounds topped with gooey marshmallows, toasted pecans, and a drizzle of maple syrup.


Ingredients

  • 2 large sweet potatoes, peeled and sliced into ½-inch rounds
  • 2 tbsp melted butter
  • 2 tbsp maple syrup
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 2025 mini marshmallows
  • ¼ cup chopped pecans
  • Optional: extra maple syrup or honey for drizzling

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato rounds with melted butter, maple syrup, cinnamon, and salt until evenly coated.
  3. Arrange slices in a single layer on the baking sheet and bake for 25–30 minutes, flipping halfway through, until tender and lightly golden.
  4. Remove from oven and top each round with a few chopped pecans and one mini marshmallow.
  5. Return to the oven and bake for 3–5 minutes more, just until marshmallows are soft and slightly toasted.
  6. Drizzle with extra maple syrup or honey before serving warm.
