Strawberry Crunch Bites are a no-bake dessert featuring a creamy strawberry filling wrapped in a crispy vanilla cookie coating and finished with a white chocolate topping.

- 1 box vanilla sandwich cookies
- 1 box strawberry gelatin mix (3 oz)
- 8 oz cream cheese, softened
- 1½ cups powdered sugar
- 1 tsp vanilla extract
- ½ cup crushed freeze-dried strawberries
- 12 oz white chocolate melting wafers
Instructions
- Crush vanilla sandwich cookies into fine crumbs. Set aside 1 cup for coating.
- In a bowl, beat cream cheese, powdered sugar, vanilla extract, and strawberry gelatin mix until smooth.
- Fold in crushed cookies (except reserved crumbs) and freeze-dried strawberries.
- Roll mixture into small 1-inch balls and place on a lined baking sheet.
- Freeze for 30–45 minutes until firm.
- Melt white chocolate until smooth.
- Dip each ball into melted chocolate and coat evenly.
- Roll or sprinkle with reserved cookie crumbs for the crunchy topping.
- Refrigerate until fully set before serving.
Notes
- Keep refrigerated for best texture; serve within 3-4 days.
- Can be made up to 2 days ahead and frozen for longer storage, then thaw in the fridge before serving.
- If you prefer a lighter filling, reduce powdered sugar slightly.
