Description

Ingredients

  • ½ cup unsalted butter, softened

  • ½ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ¾ cup diced fresh strawberries
  • 6 oz cream cheese, softened
  • 3 tbsp powdered sugar
  • ½ tsp vanilla extract

Instructions

  1. In a small bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Scoop 1 tsp portions onto a parchment-lined plate and freeze for 30 minutes.
  2. In a medium bowl, whisk flour, baking soda, and salt.
  3. In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg and vanilla, mixing until smooth.
  5. Gradually add dry ingredients and mix until a soft dough forms. Gently fold in strawberries.
  6. Scoop 2 tablespoons of dough, flatten it, and place a frozen cheesecake ball in the center. Cover with another tablespoon of dough and roll into a ball.
  7. Chill cookie dough balls for at least 1 hour.
  8. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  9. Bake for 11-13 minutes, until edges are golden and centers are soft. Let cool before serving.
