Description

Spooky Stuffed Mushroom Eyeballs are creepy, savory bites for Halloween parties, featuring mushroom caps filled with a herby cheese mixture and mozzarella eyeballs with olive pupils.


Ingredients

  • 20 medium white mushrooms, stems removed
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • ½ cup cream cheese, softened
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese (plus extra for eyeballs)
  • 2 tbsp fresh parsley, chopped
  • ½ tsp Italian seasoning
  • Salt and pepper to taste
  • 10 black olives, halved (for pupils)
  • Ketchup or sriracha (for red “veins,” optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Clean mushrooms and remove stems. Lightly brush with olive oil.
  3. In a skillet, sauté garlic in a drizzle of oil for 1 minute. Add mushroom stems (chopped) and cook until softened.
  4. In a bowl, mix cream cheese, Parmesan, mozzarella, parsley, Italian seasoning, salt, and pepper. Stir in sautéed stems.
  5. Spoon mixture into mushroom caps and top with a slice of mozzarella. Press half an olive in the center to create the “eyeball pupil.”
  6. Bake 18–20 minutes, until mushrooms are tender and filling is golden.
  7. Optional: drizzle thin red lines of ketchup or sriracha for spooky “veins.” Serve warm.

Notes

  • Can be assembled ahead and refrigerated for up to 1 day before baking.
  • If using larger mushrooms, adjust bake time as needed.
  • For extra eyeball flair, reserve a small amount of mozzarella to place on top of the pupil after baking.
  • Leftover filling can be stored in the fridge for up to 2 days.
