Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add pumpkin puree, egg yolk, and vanilla, mixing until smooth.
- In another bowl, whisk together flour, baking soda, cream of tartar, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to wet ingredients and mix until combined.
- In a small bowl, mix sugar and cinnamon for the coating.
- Scoop about 1 tablespoon of dough, roll it into a ball, and coat it in the cinnamon-sugar mixture.
- Place on the baking sheet about 2 inches apart and gently flatten the tops.
- Bake for 10–12 minutes, until the edges are set and the centers are soft.
- Cool for 5 minutes before transferring to a wire rack. Enjoy warm or cooled—they stay soft for days!
