- 1 tsp baking soda

- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg
- 1 cup pumpkin puree
- 1 tsp vanilla extract
- For the Cream Cheese Icing:
- 4 oz cream cheese, softened
- 2 tbsp butter, softened
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
- 1–2 tsp milk (as needed for consistency)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt.
- In another large bowl, cream together butter and brown sugar until light and fluffy.
- Beat in the egg, pumpkin puree, and vanilla extract until smooth.
- Gradually mix in dry ingredients until fully combined.
- Drop tablespoon-sized scoops of dough onto the baking sheet, spacing them 2 inches apart.
- Bake for 10–12 minutes, or until the tops are set and lightly golden. Cool completely before frosting.
- For the icing, beat together cream cheese, butter, powdered sugar, and vanilla until smooth. Add milk as needed for desired consistency.
- Spread icing over cooled cookies and serve immediately—or chill slightly for the best texture!
Notes
- Chill the dough for 15–20 minutes if it’s soft and difficult to handle.
- Do not over-bake; cookies should remain soft and cake-like.
- If you prefer a thinner icing, add a little more milk and re-whisk until smooth.
- Cookies can be stored in an airtight container for up to 3 days or frozen for longer storage.
