Description

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream butter and brown sugar until light and fluffy.
  4. Add egg, vanilla, and pumpkin puree, mixing until smooth.
  5. Gradually mix in the dry ingredients until just combined.
  6. Scoop 1½-tablespoon portions of dough onto the baking sheet, spacing 2 inches apart.
  7. Bake for 10–12 minutes, or until the tops are set and lightly golden. Let cool completely before frosting.
  8. To make the frosting, beat together butter, powdered sugar, cinnamon, milk, and vanilla until creamy.
  9. Frost each cooled cookie generously and let set before serving.
