Description

  • 1 ½ cups powdered sugar
  • 1 tsp cinnamon
  • 2 tbsp milk (adjust for consistency)
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together butter and brown sugar until fluffy.
  4. Add egg, vanilla, and pumpkin puree, and mix until smooth.
  5. Gradually stir in the dry ingredients until just combined.
  6. Scoop 1½-tablespoon portions of dough onto baking sheets, spacing about 2 inches apart.
  7. Bake for 10–12 minutes, or until the tops are set and lightly golden. Cool completely before frosting.
  8. For the frosting, beat butter, powdered sugar, cinnamon, milk, and vanilla until creamy and smooth.
  9. Frost cooled cookies generously and enjoy the taste of fall in every bite!

Notes

  • Dough can be chilled for easier handling (optional).
  • Make sure cookies are completely cooled before frosting to prevent melting the frosting.
