- 2 1/4 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar
- 1/4 cup molasses
- 1 large egg
- 1/2 cup granulated sugar (for rolling)
Instructions
- In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, nutmeg, and salt.
- In a large bowl, cream butter and brown sugar together until light and fluffy.
- Beat in the egg and molasses until smooth and well combined.
- Gradually mix in the dry ingredients until a soft dough forms.
- Cover and chill dough for at least 2 hours (this helps the cookies stay thick and chewy).
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop 1 tablespoon of dough, roll into a ball, and coat in granulated sugar.
- Place 2 inches apart on the baking sheet and bake for 8–10 minutes, until the tops crack and the edges are set.
- Let cool on the pan for 5 minutes before transferring to a wire rack.
Notes
- Chill dough for at least 2 hours to help cookies stay thick and chewy.
- Roll dough in granulated sugar before baking for the classic crackly top.
