Description

Ingredients

  • 1 tsp ground cinnamon

  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 1/2 cup granulated sugar (for rolling)

Instructions

  1. In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, nutmeg, and salt.
  2. In a large bowl, cream butter and brown sugar together until light and fluffy.
  3. Beat in the egg and molasses until smooth and well combined.
  4. Gradually mix in the dry ingredients until a soft dough forms.
  5. Cover and chill dough for at least 2 hours (this helps the cookies stay thick and chewy).
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop 1 tablespoon of dough, roll into a ball, and coat in granulated sugar.
  8. Place 2 inches apart on the baking sheet and bake for 8–10 minutes, until the tops crack and the edges are set.
  9. Let cool on the pan for 5 minutes before transferring to a wire rack.
