- 1 tsp dried thyme
- 1 tsp dried parsley
- ½ tsp dried oregano
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Lightly grease the slow cooker with olive oil.
- Add chicken to the slow cooker and season with salt, black pepper, thyme, parsley, and oregano.
- Sprinkle chopped onion and garlic over the chicken.
- Add rice evenly around the chicken.
- Pour in chicken broth, lemon juice, and lemon zest. Gently stir to combine without breaking up the chicken.
- Cover and cook on low for 4 hours, or until the chicken is tender and the rice is fully cooked.
- Fluff the rice with a fork and gently shred or slice the chicken if desired.
- Garnish with fresh parsley and serve warm.
