Slow Cooker Lemon Herb Chicken and Rice is a bright, comforting one-pot meal featuring tender chicken thighs, fragrant herbs, lemon, and fluffy rice.

- 1½ lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup long-grain white rice
- 2½ cups chicken broth
- ¼ cup fresh lemon juice
- 1 tsp lemon zest
- 1 tsp dried thyme
- 1 tsp dried parsley
- ½ tsp dried oregano
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Lightly grease the slow cooker and drizzle olive oil on the bottom.
- Add chicken thighs and season with salt, black pepper, thyme, parsley, and oregano.
- Sprinkle onion and garlic over the chicken.
- Add rice evenly around and slightly under the chicken.
- Pour chicken broth, lemon juice, and lemon zest over everything.
- Cover and cook on low for 4–5 hours, or until chicken is tender and rice is fully cooked.
- Fluff rice gently with a fork and spoon juices over the chicken.
- Garnish if desired and serve warm.
Notes
- Gluten-free when using gluten-free broth.
- If rice is undercooked, cook a little longer with the lid on.
- Garnish with extra parsley for freshness.
- Leftovers refrigerate well for 2–3 days.
