Description

Slow Cooker Lemon Herb Chicken and Rice is a bright, comforting one-pot meal featuring tender chicken thighs, fragrant herbs, lemon, and fluffy rice.


Ingredients

  • lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2½ cups chicken broth
  • ¼ cup fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Lightly grease the slow cooker and drizzle olive oil on the bottom.
  2. Add chicken thighs and season with salt, black pepper, thyme, parsley, and oregano.
  3. Sprinkle onion and garlic over the chicken.
  4. Add rice evenly around and slightly under the chicken.
  5. Pour chicken broth, lemon juice, and lemon zest over everything.
  6. Cover and cook on low for 4–5 hours, or until chicken is tender and rice is fully cooked.
  7. Fluff rice gently with a fork and spoon juices over the chicken.
  8. Garnish if desired and serve warm.

  • Gluten-free when using gluten-free broth.
  • If rice is undercooked, cook a little longer with the lid on.
  • Garnish with extra parsley for freshness.
