Description

Slow Cooker French Dip: Juicy, tender beef shreds piled on toasted rolls with a rich au jus for dipping.


Ingredients

  • 34 lb beef chuck roast
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 3½ cups beef broth
  • 1 tbsp Worcestershire-style sauce
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • ½ tsp black pepper
  • 8 hoagie or French sandwich rolls
  • 8 slices provolone or Swiss cheese (optional)
  • 2 tbsp butter (for toasting rolls)

Instructions

  1. Place chuck roast in the slow cooker. Add onion and garlic on top.
  2. Pour in beef broth, Worcestershire-style sauce, soy sauce, thyme, and black pepper.
  3. Cover and cook on low for 8 hours, or until beef is very tender and easily shreds.
  4. Shred beef in the slow cooker and let it soak in the juices for 10–15 minutes.
  5. Preheat oven to 350°F (175°C).
  6. Slice rolls open and lightly butter the insides. Toast for 5–7 minutes until golden.
  7. Pile shredded beef onto rolls and top with cheese if using.
  8. Return to oven for 3–5 minutes until cheese is melted.
  9. Strain cooking liquid and serve as au jus for dipping.

Notes

  • For richer au jus, strain the cooking liquid or skim fat as desired.
  • Shredded beef can be made ahead and kept in the juices, then reheated before serving.
  • Toast the rolls for extra texture and flavor.
  • Cheese is optional; provolone or Swiss pairs well with the beef.
  • Leftover au jus can be stored in the refrigerator and reheated for dipping.
