Slow Cooker French Dip: Juicy, tender beef shreds piled on toasted rolls with a rich au jus for dipping.
Ingredients

- 3–4 lb beef chuck roast
- 1 large onion, sliced
- 3 cloves garlic, minced
- 3½ cups beef broth
- 1 tbsp Worcestershire-style sauce
- 1 tbsp soy sauce
- 1 tsp dried thyme
- ½ tsp black pepper
- 8 hoagie or French sandwich rolls
- 8 slices provolone or Swiss cheese (optional)
- 2 tbsp butter (for toasting rolls)
Instructions
- Place chuck roast in the slow cooker. Add onion and garlic on top.
- Pour in beef broth, Worcestershire-style sauce, soy sauce, thyme, and black pepper.
- Cover and cook on low for 8 hours, or until beef is very tender and easily shreds.
- Shred beef in the slow cooker and let it soak in the juices for 10–15 minutes.
- Preheat oven to 350°F (175°C).
- Slice rolls open and lightly butter the insides. Toast for 5–7 minutes until golden.
- Pile shredded beef onto rolls and top with cheese if using.
- Return to oven for 3–5 minutes until cheese is melted.
- Strain cooking liquid and serve as au jus for dipping.
Notes
- For richer au jus, strain the cooking liquid or skim fat as desired.
- Shredded beef can be made ahead and kept in the juices, then reheated before serving.
- Toast the rolls for extra texture and flavor.
- Cheese is optional; provolone or Swiss pairs well with the beef.
- Leftover au jus can be stored in the refrigerator and reheated for dipping.
