- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- ¾ cup heavy cream
- ¼ cup fresh lemon juice
- 1 tsp lemon zest
- 1 tsp dried thyme
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp cornstarch mixed with 1 tbsp water (optional, for thickening)
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Lightly grease the slow cooker and place chicken inside.
- In a bowl, whisk together olive oil, garlic, chicken broth, heavy cream, lemon juice, lemon zest, thyme, salt, and black pepper.
- Pour the mixture over the chicken.
- Cover and cook on low for 5–6 hours or high for 3 hours, until chicken is tender.
- If a thicker sauce is desired, stir in the cornstarch slurry during the last 20 minutes of cooking.
- Spoon sauce over the chicken before serving.
- Garnish if desired and serve warm over rice, mashed potatoes, or vegetables.
Notes
- You can use chicken breasts or thighs (thighs tend to stay juicier in slow cookers).
- The cornstarch slurry is optional; omit if you prefer a thinner sauce.
