Shipwreck Casserole is a hearty, 5-ingredient, easy, cheesy comfort dish baked to perfection.
Ingredients

- 1 lb ground beef
- 1 small onion, chopped
- 3 medium potatoes, thinly sliced
- 1 cup uncooked white rice
- 1 cup frozen mixed vegetables
- 1 can (14 oz) diced tomatoes
- 1½ cups beef broth
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1½ cups shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook ground beef and onion until browned. Drain excess fat if needed.
- Layer sliced potatoes evenly in the bottom of the baking dish.
- Sprinkle uncooked rice over the potatoes.
- Spread cooked beef mixture evenly on top.
- Add mixed vegetables and diced tomatoes.
- Pour beef broth evenly over the layers. Season with salt, black pepper, and paprika.
- Cover tightly with foil and bake for 1 hour 30 minutes, or until potatoes and rice are tender.
- Remove foil, sprinkle cheese over the top, and bake uncovered for 10–15 minutes until melted and bubbly.
- Let rest 10 minutes before serving.
Notes
- Gluten free casserole when prepared with gluten-free beef broth and canned tomatoes.
- Serves 6. Great for meal prep or feeding a crowd.
