  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 4 cups beef broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  2. Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
  3. Stir in flour, thyme, paprika, salt, and black pepper. Cook for 1 minute to remove the raw flour taste.
  4. Slowly pour in beef broth, stirring constantly until smooth.
  5. Add diced potatoes and carrots. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes, or until vegetables are tender.
  6. Stir in peas and milk. Simmer for 5 minutes.
  7. Add shredded cheese and stir until melted and creamy.
  8. Taste and adjust seasoning if needed. Serve warm, garnished with parsley if desired.
