Instructions
- Preheat oven to 400°F (205°C) and line a large sheet pan with parchment paper or foil.
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, paprika, salt, and black pepper.
- Place chicken and vegetables on the sheet pan.
- Pour lemon herb mixture evenly over everything and toss to coat well.
- Spread chicken and vegetables into an even layer.
- Bake for 35-40 minutes, or until chicken is cooked through and vegetables are tender.
- Optional: Broil for 2-3 minutes for extra browning.
- Let rest for 5 minutes, garnish if desired, and serve warm.
