Description

Ingredients

  • 1 large egg yolk
  • ⅔ cup pumpkin puree

  • ¼ cup granulated sugar (for coating)
  • 1 tsp cinnamon (for coating)

Instructions

  1. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt. Set aside.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add pumpkin puree, egg yolk, and vanilla extract. Mix until smooth and creamy.
  4. Gradually add the dry ingredients to the wet ingredients and stir until combined.
  5. Cover and chill the dough in the refrigerator for at least 2 hours (this helps the cookies stay soft and thick).
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Mix sugar and cinnamon in a small bowl. Roll 1 tablespoon of dough into a ball and coat it in the cinnamon sugar mixture.
  8. Place on baking sheets about 2 inches apart and slightly flatten the tops.
  9. Bake for 10–12 minutes, or until edges are just set and centers are soft.
