Description

Ingredients

  • 1 tablespoon sugar

  • 1 cup cold butter, cubed
  • 56 tablespoons ice water
  • 1 cup pumpkin puree
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ginger
  • 1 egg yolk (for brushing)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)

Instructions

  1. In a food processor or large bowl, combine flour, sugar, and salt. Cut in butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Form into a ball, wrap in plastic, and chill for 30 minutes.
  3. In a bowl, mix pumpkin puree, brown sugar, and spices until smooth.
  4. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  5. Roll out chilled dough to about ⅛-inch thickness and cut into 4–5-inch circles.
  6. Spoon a small amount of pumpkin filling onto one half of each circle. Fold over and seal edges with a fork.
  7. Brush each pasty with egg yolk and bake for 20–25 minutes, until golden brown.
  8. Whisk together glaze ingredients and drizzle over cooled pasties.
