Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, cream butter and brown sugar until fluffy. Add maple syrup, egg, vanilla, and pumpkin puree; mix until smooth.
  4. Gradually add dry ingredients and stir until combined. Fold in any optional mix-ins.
  5. Scoop tablespoon-sized portions of dough onto baking sheets, spacing 2 inches apart.
