Description

Pumpkin Cheesecake Thumbprints are soft, spiced pumpkin cookies filled with creamy cheesecake—an irresistible fall treat.


Ingredients

  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1/2 cup pumpkin puree
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 3 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • Cinnamon sugar or crushed graham crackers (for garnish, optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, cream butter and sugars until light and fluffy. Add egg yolk, pumpkin puree, and vanilla; mix until combined.
  4. Gradually mix in dry ingredients until a soft dough forms.
  5. Roll dough into 1-inch balls and place on baking sheet. Use your thumb or the back of a spoon to make an indentation in each.
  6. For the filling, beat cream cheese, powdered sugar, and vanilla until smooth. Spoon a small amount into each cookie’s center.
  7. Bake for 12–14 minutes, or until cookies are set. Let cool completely.
  8. Optional: sprinkle with cinnamon sugar or crushed graham crackers before serving.

Notes

  • Chill dough for at least 30 minutes for easier handling (optional).
  • Do not overfill the centers to prevent overflow.
  • Store cookies in an airtight container at room temperature for up to 3 days, or refrigerate for longer; keep the cheesecake filling chilled until serving.
