  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 16 chicken or beef potstickers (store-bought or homemade)
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • 2 green onions, sliced
  • 1/4 cup soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 tsp sesame oil
  • 2 cups shredded green or napa cabbage
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • Pinch of salt

Instructions

  1. Cook rice noodles according to package directions. Drain, toss with sesame oil, and set aside.
  2. Heat vegetable oil in a skillet over medium heat. Add potstickers and cook until crispy and golden on both sides. Remove and keep warm.
  3. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, honey, ginger, garlic, and sesame oil.
  4. In the same skillet, add carrots and bell peppers and sauté for 2–3 minutes until slightly tender.
  5. Add cooked noodles to the skillet and pour sauce over the top. Toss until noodles are evenly coated and warmed through.
  6. In a separate bowl, toss cabbage with rice vinegar, sesame oil, and salt.
  7. Divide noodles into bowls, top with crispy potstickers and cabbage slaw.
  8. Garnish with green onions and serve immediately.

Notes

  • For a vegetarian version, use veggie potstickers and gluten-free soy sauce if needed.
  • To keep potstickers crispy, cook them in batches and serve immediately.
