Description

Poor Man’s Husband Casserole is a budget-friendly, cozy weeknight staple made with ground beef, egg noodles, and a creamy, cheesy sauce.

Ingredients

Scale
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups uncooked egg noodles
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1½ cups shredded cheddar cheese
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook egg noodles according to package directions until al dente. Drain and set aside.
  3. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  4. Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
  5. Stir in cream of mushroom soup, cream of chicken soup, milk, paprika, salt, and black pepper until smooth.
  6. Add cooked noodles to the skillet and mix until well coated.
  7. Transfer mixture to the prepared baking dish and spread evenly.
  8. Sprinkle shredded cheese over the top.
  9. Bake uncovered for 30–35 minutes, or until bubbly and lightly golden.
  10. Let rest for 5 minutes, garnish with parsley, and serve warm.

Notes

  • Garnish with parsley for a fresh finish (optional).
  • Let the casserole rest for 5 minutes before serving to set slightly for easier slicing.
  • Can be assembled ahead and refrigerated; bake as directed, adding a few extra minutes if starting from cold.
  • Leftovers refrigerate well for 3–4 days; reheating options include oven or microwave.
  • Substitute shredded cheddar with a cheddar–jack blend if desired.
