Description
Poor Man’s Husband Casserole is a budget-friendly, cozy weeknight staple made with ground beef, egg noodles, and a creamy, cheesy sauce.

- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups uncooked egg noodles
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) cream of chicken soup
- 1 cup milk
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1½ cups shredded cheddar cheese
- 2 tbsp chopped parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook egg noodles according to package directions until al dente. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
- Stir in cream of mushroom soup, cream of chicken soup, milk, paprika, salt, and black pepper until smooth.
- Add cooked noodles to the skillet and mix until well coated.
- Transfer mixture to the prepared baking dish and spread evenly.
- Sprinkle shredded cheese over the top.
- Bake uncovered for 30–35 minutes, or until bubbly and lightly golden.
- Let rest for 5 minutes, garnish with parsley, and serve warm.

- Let the casserole rest for 5 minutes before serving to set slightly for easier slicing.
- Can be assembled ahead and refrigerated; bake as directed, adding a few extra minutes if starting from cold.
- Leftovers refrigerate well for 3–4 days; reheating options include oven or microwave.
