Description

Poor Man’s Husband Casserole is a 1-pan, easy, budget-friendly, delicious comfort dish that makes weeknight dinners quick and satisfying.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups uncooked egg noodles
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 1/2 cups shredded cheddar cheese
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook egg noodles according to package directions until just tender. Drain and set aside.
  3. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  4. Add onion and garlic and sauté for 2-3 minutes until softened and fragrant.
  5. Stir in cream of mushroom soup, cream of chicken soup, milk, salt, black pepper, and paprika until smooth.
  6. Add cooked noodles and stir until fully combined.
  7. Transfer mixture to the prepared baking dish and spread evenly.
  8. Sprinkle shredded cheese evenly over the top.
  9. Bake uncovered for 30-35 minutes, or until bubbly and lightly golden.
  10. Let rest for 5 minutes before serving.

Notes

  • For a lighter version, use lean ground beef and reduced-fat cheese.
