  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 slices turkey bacon, cooked and crumbled
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 cup frozen corn
  • 2 cups shredded cheddar cheese
  • 1 bag (32 oz) frozen tater tots

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
  4. Stir in crumbled turkey bacon, cream of mushroom soup, milk, salt, black pepper, and paprika until smooth.
  5. Fold in frozen corn and remove from heat.
  6. Spread the beef mixture evenly into the prepared baking dish.
  7. Sprinkle shredded cheddar cheese over the top.
  8. Arrange tater tots in a single layer on top of the cheese.
  9. Bake uncovered for 40–45 minutes, or until tater tots are golden and crispy.
  10. Let rest for 5 minutes before serving.

Notes

  • You can substitute regular bacon for turkey bacon if preferred.
  • For extra creaminess, substitute half-and-half for milk.
  • For a crisper top, bake a few minutes longer or place under the broiler for 1–2 minutes at the end (watch closely).
