Description

Pesto Grilled Cheese: Crispy, melty sandwich bursting with basil flavor and ready in 15 minutes.


Ingredients

  • 8 slices sourdough or favorite sandwich bread
  • 4 tbsp butter, softened
  • 4 tbsp basil pesto (homemade or store-bought)
  • 8 slices mozzarella or provolone cheese (or a mix of both)
  • 2 tbsp grated Parmesan (optional for extra flavor)
  • Optional add-ins: tomato slices, spinach leaves, or sun-dried tomatoes

Instructions

  1. Heat a skillet or griddle over medium heat.
  2. Spread butter on one side of each bread slice. Spread pesto on the other side.
  3. Place 4 slices, butter-side down, on the skillet. Layer with cheese (and optional add-ins).
  4. Top each with another slice of bread, butter-side up.
  5. Cook for 2-3 minutes per side, pressing gently, until the bread is golden brown and the cheese is perfectly melted.
  6. Sprinkle with a little Parmesan and serve warm with tomato soup or a side salad.
