- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- ½ cup granulated sugar (plus extra for topping)
- 1 large egg
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- ½ tsp baking powder
- ½ tsp salt
- 1 ½ cups pecans, finely chopped
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream butter, powdered sugar, and granulated sugar until light and fluffy.
- Beat in egg and vanilla extract until smooth.
- In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients.
- Fold in chopped pecans.
- Scoop tablespoon-sized portions of dough, roll into balls, and place 2 inches apart on prepared sheets.
- Lightly roll tops in extra granulated sugar, then gently flatten each cookie.
- Bake 12–15 minutes, until edges are golden. Cool on sheets 5 minutes before transferring to a wire rack.
Notes
- Delicate sugar crust on top adds a crisp bite.
