- 2 lbs boneless, skinless chicken breasts
- 2 cups heavy cream (or half-and-half)
- 1 cup chicken broth
- 1 block (8 oz) cream cheese, cubed
- 1 cup grated Parmesan cheese
- 4 garlic cloves, minced
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper, to taste
- 8 oz pasta (penne, rotini, or fettuccine)
- Fresh parsley, for garnish
Instructions
- Place chicken breasts in your slow cooker. Add heavy cream, chicken broth, cream cheese, Parmesan, garlic, Italian seasoning, paprika, salt, and pepper.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is tender and cooked through.
- Remove chicken, shred it using two forks, and return it to the sauce. Stir to combine.
- Cook pasta according to package directions, drain, and toss with the creamy chicken sauce.
- Garnish with fresh parsley and extra Parmesan before serving.
Notes
- You can substitute half-and-half for heavy cream for a lighter version.
- If the sauce is too thick, stir in a little extra chicken broth or water until your desired consistency.
- For a richer flavor, sauté garlic briefly in a skillet before adding to the slow cooker.
- Stir in chopped fresh parsley just before serving for extra color and aroma.
