- 1 lb ground turkey
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup uncooked orzo
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground turkey and cook until browned, breaking it apart as it cooks.
- Stir in onion and cook for 2-3 minutes until softened. Add garlic and cook for 30 seconds.
- Add orzo, diced tomatoes, chicken broth, Italian seasoning, paprika, salt, and black pepper. Stir well.
- Bring to a gentle boil, then reduce heat and cover.
- Simmer for 12-15 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
- Stir in Parmesan cheese until creamy.
- Garnish if desired and serve warm.
