  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup uncooked orzo
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground turkey and cook until browned, breaking it apart as it cooks.
  3. Stir in onion and cook for 2-3 minutes until softened. Add garlic and cook for 30 seconds.
  4. Add orzo, diced tomatoes, chicken broth, Italian seasoning, paprika, salt, and black pepper. Stir well.
  5. Bring to a gentle boil, then reduce heat and cover.
  6. Simmer for 12-15 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
  7. Stir in Parmesan cheese until creamy.
