Description
One-Pot Creamy Cheeseburger Macaroni Soup is a cozy, family-friendly one-pot meal that captures the nostalgic flavors of a cheeseburger in a creamy, comforting soup.
Ingredients
Scale
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3 cups beef broth
- 2 cups milk
- 1 cup heavy cream
- 1½ cups elbow macaroni, uncooked
- 2 cups shredded cheddar cheese
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp mustard powder (optional)
- 2 tbsp chopped parsley or green onions (optional, for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
- Pour in beef broth, milk, and heavy cream. Bring to a gentle simmer.
- Stir in uncooked macaroni, salt, black pepper, paprika, and mustard powder if using.
- Simmer for 10–12 minutes, stirring occasionally, until pasta is tender.
- Reduce heat to low and gradually stir in shredded cheddar cheese until melted and smooth.
- Simmer for 2–3 minutes until slightly thickened.
- Garnish if desired and serve hot.
Notes
- For a lighter version, substitute half-and-half or milk for the heavy cream.
- Use 85-90% lean ground beef for a leaner dish.
- Stir in extra cheddar at the end for a cheesier finish.
- Leftovers refrigerate well for up to 3 days; reheat gently on the stove.
- Adjust salt to taste after cheese melts.
