  • 1 cup heavy cream
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1½ tsp Cajun seasoning
  • ½ tsp paprika
  • ½ tsp black pepper
  • 1½ cups shredded cheddar or mozzarella cheese
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced sausage and cook for 3–4 minutes until lightly browned.
  3. Stir in onion and cook for 2–3 minutes until softened. Add garlic and cook for 30 seconds.
  4. Pour in chicken broth, heavy cream, diced tomatoes, Cajun seasoning, paprika, and black pepper. Stir well.
  5. Add uncooked pasta and stir to combine.
  6. Bring to a gentle boil, then reduce heat to medium-low. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is tender.
  7. Remove from heat and stir in shredded cheese until melted and creamy.
